Sometimes I get frustrated cooking for myself & Josh. I love to cook and I love to try new recipes but I'm not a huge portion kind of girl, and he's 3 and eats about half the amount that I do. When we have friends over for dinner I get a chance to be a little more creative and try new dishes. And over the past couple of years of course I've mastered the art of modifying recipes to fit our needs & our appetites when it's just the two of us. I still like finding an easy to prepare menu that works for us.
We eat a lot of veggies & salads and try to keep things pretty healthy. Neither Josh nor myself has a penchant for fast food or anything frozen. Unless you're talking about Eggo waffles because we will fight over the last one of those. When we get the craving for pizza we like to make it at home so that we can put our favorite fresh veggies on it and because Josh loves helping me "decorate" the pizzas. One of our favorites is a "Greek Pizza."
Here's the dish on this delish:
Sliced Tomatoes: We like to use the little grape tomatoes. (P.S. These are perfect to snack on while making your pizza!)
1 Sliced Avocado
Kalamata Olives: Sliced or whole. We only put them on half bc Jdizzy isn't a fan.
Mozzarella & Feta Cheeses
1 Clove of Garlic Chopped
Olive Oil
Tomato Sauce (optional)
Pizza Crust: Sometimes we make our own but I've recently found a brand at HEB that carries pizza crust in mini sizes. The two of us can easily split one and it makes for an easy dinner after a long day at work/school.
Please note that I didn't put exact measurements of the toppings because it's really a personal preference.
So here is how it's done. I usually start by heating a tablespoon of olive oil and letting the chopped garlic cook a little bit. Once I'm done with that I brush a little bit of olive oil onto the pizza crust. I like to put all of the chopped garlic on the pizza as well but that's just a personal preference. Next goes the tomato sauce if you're into that kind of thing. If not, skip on ahead. Mozzarella goes on next, followed by tomato, avocado and olive slices. Finally top with a healthy (or hefty) serving of feta cheese.

Now pop that bad boy in the oven for about 10 minutes (or longer if you like crispy crust) and you're ready to go!
I recommend a glass of wine with this delicious pizza.
